Do you love the idea of creating edible Christmas decorations but don’t know where to start? This super easy vegan recipe for gingerbread will make more than enough decorations to cover your tree (if you can resist eating them first).
What I love about this recipe is that it can be made in advance and frozen – ready for you to bring the dough out for a session on rolling, cutting, baking and decorating when you need to come up with an activity for little ones. You can get super creative with decorating or just keep it simple with plain white icing – whatever you fancy!

For these easy vegan edible Christmas decorations you will need:
- 350g plain flour
- 1 tsp bicarbonate of soda
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 100g vegan baking block (or butter if you aren’t vegan)
- 175g light brown sugar
- Egg substitute equivalent to 1 egg (I use Free and Easy)
- 4 tbsp golden syrup
- Icing sugar
You’ll also need a baking tray and baking parchment, cutters in various shapes and a metal skewer to make holes if you want to hang your decorations.
Here’s how to make easy vegan edible Christmas decorations:
Preheat the oven to 190oC and place your baking parchment on an oven tray.
Put the flour, bicarbonate of soda, ginger and cinnamon in a bowl and mix together.
Add the vegan baking block and rub into the dry ingredients until the mixture resembles breadcrumbs. Add the sugar and mix.
Add the egg substitute – I do this by sprinkling the dry powder into the mix then adding the water. Add the golden syrup and give everything a good mix so that it forms a dough.
Take the dough out of the bowl and gently knead on a floured surface. Once the dough is nice and smooth divide it into two (you can freeze one batch if you like).
Roll out the dough until it’s about about half a centimetre thick then start cutting. Bring any excess dough back into a ball and roll out again until it’s all used up.
Place your biscuit shapes on the lined baking tray. If you want to hang your decorations then make a small hole for the string before they go in the oven. Bake for 10 minutes.
When you take the biscuits out of the over you may need to re-punch the holes for the string – do this before the biscuits cool otherwise they make break.
Once cooled you can make up your icing and get creative with decorating!
